Mesir Wat (Ethiopian Spiced Red Lentils)


Ingredients: 60ml olive oil, 600g onion chopped, 60g garlic chopped, 75g ginger chopped, 30g berbere (can be replaced by garam masala or ras el hanout with red chili), 2tbsp turmeric, 2tsp comin, 1000g crushed tomatoes canned, 600 g split red lentils (or other beans), 2,5 l vegetable stock, salt and pepper.

Instructions:

  1. Heat olive oil and cook the onion until translucent.
  2. Add garlic, ginger, berbera, turmeric and comin. Cook for about 3minutes, until fragrant. Stir in the tomatoes and their juices and cook for another minute.
  3. Add the lentils/beans and broth. Cover and bring to a boil. Once boiling, reduce to a simmer. Cover and simmer until the lentils/beans are completely tender, about 25 minutes, stirring occasionally. Season with salt and pepper. Serve warm.
